Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2024 Marcs & GrappaEmilys Paddock with its easterly facing slope is our smallest vineyard of 2. 7 hectares. Low yields create intense flavours while the wine is known for its firm tannin profile. Shiraz and Cabernet Franc co fermented with natural yeasts, kept on skins for 5 6 weeks and given a gentle press, matured for 12 months in French oak. Predominately Shiraz, this full bodied wine is given added dimension by a small yet impactful 7% addition of Cabernet Franc.
