Margerum - Mute-Age NV (750ml) VaucluseMute Age is a Grenache based dessert wine that is left in 34 liter demi john glass bottles and aged outside (they were actually on our winery's roof!) for two years. It is very unique and pairs extremely well with chocolate.

Love the length and subtlety to this young wine

and cocoa that define the region

with limited rainfall and warm daytime temperatures throughout summer

Also some butter and rum raisin notes with lots of juicy acidity

Pairs well with roast beef

so the 2023 Châteauneuf Du Pape is based on 40% Mourvèdre

soft cheeses like brie or comté

finish keeps you coming back for more

and I think this 2016 is the best yet

and Sauvignon Blanc and Chasselas strains from the Lörrach region of Germany

Its strong and round character is well explained by the attention paid to the wine-making process through manual harvesting

such is the philosophy here
